Banana, Blueberry, & Protein Pancakes

These are our favorite breakfast meal! In reality, we could eat them for lunch and dinner, too.

Pancakes! Is it time for breakfast, yet?

Ingredients (makes 6 pancakes):

  • 2 bananas
  • 2 eggs
  • 1 cup of uncooked old fashioned oat meal
  • 2 tablespoons of peanut butter
  • 20 grams of (Shaklee) protein powder (2 scoops)
  • 1 cup of blueberries
  • 1 tablespoon of cinnamon (optional)
  • 1 tablespoon of butter (for the frying pan)

Mash bananas in large mixing bowl. Mix together with eggs, peanut butter, oatmeal, protein powder, and blueberries.

Heat frying pan; melt ½ of butter to coat the bottom of the frying pan.

Pour batter into frying pan into pancakes (about 1/6 of batter per pancake).  Cook pancakes until they are browned; flip; cook the other side. Depending on how big your frying pan is, you will repeat above until finished.
